Take your pick from soft shelled turtle, frogs, cat fish, eels, sturgeon and squid. All of which can be found in the fresh (alive) fish / meat counter at the Cho Don Xuan market in Hanoi. The surrounding streets are full of cafés and restaurants that make good use of their proximity to such fresh ingredients. This one whipped up a simple salad of red jellyfish, fried tofu and coconut shavings. Delicious.
